Reverse sear Bacon Wrapped Filet Mignon

The king of steaks. The small but mighty bacon-wrapped filet. My mouth is watering just writing this. The key to the perfect filet is the reverse sear! Place in the oven on low heat until it reaches the perfect temperature of 129 degrees, then sear it over high heat to get that perfect crispy texture.



Ingredients

  • Mashed Potatoes here

  • Filet Mignon

  • Bacon!

  • Salt, Pepper, Garlic Powder

Directions

  1. Preheat oven to 275 degrees

  2. Place steak on top of a wire rack baking sheet

  3. Wrap steak with a bacon strip and hold with a toothpick or butcher string

  4. Season the steak all over with even amounts of salt, pepper, and garlic powder

  5. Place in oven, check temps and remove at 129 degrees (30-35 mins or so)

  6. Heat a cast iron or carbon steel pan on high with oil and butter

  7. Sear on all sides for 30 seconds, and crisp the bacon up

  8. Let it rest a good 5 minutes then place it on a bed of creamy mashed potatoes.

  9. Enjoy.
